Apple & Cranberry Chutney | The Foodie Gift | Blogmas Day 17

If you're still on the hunt for the perfect present to give to your foodie friends, this might just be it! Chutneys are awesome gifts because they keep a long time in their jars and even improve with time! And is there anything more festive then apple and cranberry flavour? It's definitely perfect to have with your Christmas meal (and to make your leftovers a feast as well ;-) )
This recipe makes four 500g jars! So see if you maybe need to half the ingredients list.
Here's what you'll need:
1kg cooking apples
500g eating apples
450g onion
50g fresh root ginger
1 tsp mixed peppercorns
500g granulated sugar
250ml apple cider vinegar
500g cranberries
Peel and chop all of your apples, slice the onions and finely chop the ginger.
Get out your largest saucepan and put everything except the cranberries in (so really it should be a BIG saucepan). Gently heat everything up, until the sugar dissolves. Bring the whole thing to a boil then turn down the heat and let it simmer uncovered for about 50 minutes to an hour. Don't forget to stir regularly until the apples and onions are all soft and tender, all of the watery juice is gone and your whole mixture has thickened.
Now add in your cranberries and cook for another 30 minutes, until the berries have softened and partly burst, giving your chutney this lovely reddish pink colour. Put your chutney into your jars and seal, then store in a cool dark place until used. This will keep for six months. Once opened keep it in the fridge to make sure it stays fresh.
It's definitely quite a bit of prep that needs to be done here but once you've got everything chopped and sliced the hard work is done. The rest is simple and the result is definitely worth the work.
