Winter Warmer Soup | Blogmas Day 11

Is there anything better than a bowl of steaming soup on a cold winter's day? I don't think so! This one is particularly easy to make and absolutely delicious if I say so myself. Only a few ingredients are needed to make this and surprise, surprise: butternut squash is one of them (I'm just a squash and pumpkin kinda girl haha). Here's how to make my creamy butternut squash soup.


You'll need:


1 small butternut squash
1 small clove of garlic
some olive oil
600ml vegetable stock
salt and pepper
crème fraîche


Chop and peel the squash as well as the garlic and fry both veggies in a little bit of olive oil, using a big pot. After about ten minutes add the stock and put the lid on the pot. Let the whole thing simmer for about 15 - 20 minutes, until the squash is all soft and starts to fall apart. Now blend the whole thing til you've got a smooth consistency, season to taste with salt and pepper and thicken the soup with a couple of spoons of creme fraiche. There you go, you're winter warmer is ready :)
 





Enjoy this with a slice of French baguette, or grate some parmesan on top to have a sort of lid of melted cheese on your soup if you're into that kind of thing. Let me know if you make this yourselves!
