Spicy Morrocan Couscous Salad | The Healthy Life

After indulging in a few too many chocolate eggs and hot cross buns and carrot cakes and all sorts of not so healthy snacks lately I really needed to get back to more healthy meals, eating well and keeping fit. So one BIG healthy food shop later I had everything I needed for a week of clean eats! One of my favourite foods of all time (simply because it's so easy to prep and take to work/ uni/ school with you) is a couscous salad. Usually I just throw in whatever veggies I've got lying around the house but this time I decided to follow a recipe from one of my cook books, only slightly altering it to my taste. It was super easy to make and incredibly delicious! So here's what I did.





You'll need:

🍅 150g chicken breast
🍅 1 red onion
🍅 olive oil
🍅 apple cider vinegar [or other]
🍅 1 clove of garlic
🍅 ajvar
🍅 50g couscous
🍅 250g tomatoes
🍅 1 cucumber
🍅 1 handful of mint leaves
🍅 juice of a lemon
🍅 salt, pepper and paprika to season
🍅 chili flakes [optional]


Put your couscous in a bowl, add water til it's all covered then cover your bowl with a plate/lid. Put that aside til later. Now chop your chicken breast into small pieces and fry them together with the chopped onion and the grated garlic in some olive oil. Season with salt, pepper and paprika. When the chicken is cooked and starting to brown, add about 2-3 tbsp of ajvar so all the meat is covered in it and let it sizzle for a couple more minutes.

While your chicken is in the pan, chop up the cucumber and tomatoes and cut the mint leaves into tiny pieces. Fluff up the couscous with a fork and add it into a salad bowl with all the veg. Add about 2 tbsp of lemon juice, 3tbsp of apple cider vinegar and 3 tbsp of olive oil as well as salt and pepper to taste. Season with chili flakes if you're into that kinda thing. Then add the chicken and mix together well. 



See, easy! This makes about 2 portions, one for supper today and one for lunch at work tomorrow :-) Also definitely a good salad to make for any garden party/ BBQ this summer.
