Shakshuka Recipe | Brunch Love

I finally got round to making my own shakshuka for a lovely lazy weekend brunch at mine a couple weeks ago. And it turned out quite well if I do say so myself. I found a easy-to-follow recipe in one of my favourite cook books Ottolenghi's Jerusalem and I kind of adapted it to what I had at the house and what I fancied adding in and thought I'd share the result with you guys today! It's super easy and doesn't require a big grocery shop or anything. But enough, let's get to it.


Here's what you'll need:

olive oil
3 tbsp harissa paste
3 tsp tomato puree
1 big red pepper
2 cloves of garlic
1 tsp ground cumin
1 can chopped tomatoes
2 eggs
chili flakes
dried rosemary
salt and pepper
ciabatta or any bread for dipping



Peel and finely chop you garlic, cube the red pepper.

In an oven proof pan (cast iron if you have it) heat up the olive oil than add harissa, tomato puree, red pepper cubes, garlic, cumin and salt and sauté for about 10 minutes until the pepper cubes are all soft. Add in your canned tomatoes, bring to a simmer and leave simmering for another 15 to 20  minutes until the sauce has thickened considerably.

Taste test your sauce and add salt, pepper, rosemary and chili (and really any other herbs you might find suitable). Once the sauce is to your taste, create two little hollows for the eggs. Crack open your eggs and pop them into the hollows. With a fork, make sure that the egg white mixes with the sauce while the egg yolk stays intact on top. Let the whole thing simmer for another 15 minutes until the egg white has set.

Now take the pan off the stove and put it in the oven for another 10 minutes at 180°C.

While you wait, cut your bread into dipable slices. Now there's only one thing left to do. Tuck in! :-) This makes enough for two hungry brunch-lovers :-)
