Easter Carrot Cake

So Easter is almost upon us and so is the time of chocolate eggs and Easter treats. Last year I shared with you guys this super easy chocolate nest recipe, this year it'll be a delicious carrot cake. I just love a good carrot cake, I mean it's basically like eating vegetables right?! ;-) It's easy to make (though I suggest you get a blender for the carrots unless you really fancy an arm workout.. then by all means, go ahead and grate the hell out of those veggies), pretty to look at and sooooo delicious. Here's how I made mine:



What you'll need:

🍰 250g carrots
🍰 50ml orange juice
🍰 50g soft butter
🍰 180g caster sugar
🍰 4 eggs
🍰 50g ground almonds
🍰 250g plain flour
🍰 1 tbsp baking powder
🍰 100ml milk

For the cream:
🍰 500g quark
🍰 150ml orange juice
🍰 100g sugar
🍰 1 pck instant gelatin powder
🍰 400ml whipping cream



What to do:

Peel and grate your carrots and mix with the orange juice. In a separate bowl whisk together the butter and sugar. Add in the eggs, one after the other and whisk til you've got a creamy consistency. Then alternate between adding in your dry ingredients (the almonds, the flour and the baking powder) and the milk. At last, stir in the carrot mixture. Your batter then goes into a springform tin lined with greaseproof paper and will need to bake in the oven at 170°C for about 30 minutes. Use a toothpick to see if it's quite done yet - if it comes out clean the cake is ready. Leave it to cool, then cut horizontally into two. Put your bottom tier on a plate and put a cake ring around it.

For the cream, mix the quark and the orange juice then slowly stir in the gelatin. After that the sugar goes in, keep stirring. In another bowl whip the cream. Then slowly fold the cream into the quark mixture.

Layer the cream onto your first tier, then cover with the second tier and put cream on that too. Leave some of the cream to go on the sides of the cake later. Put your cake in the fridge and leave for about 3 hours so the cream can set. After that remove the cake ring, cover the sides of the cake and decorate as you wish. I used some marzipan carrots and chopped pistachios.
