Christmas Baking: Owl Cookies

Thursday, December 24, 2015

Hi guys! Happy 24th of December and a Merry Christmas to all those of you who, like me, celebrate Christmas tonight :) If you're looking for an easy peasy last minute Christmas cookie recipe then look no further! I made these delicious gingerbread spiced owl cookies yesterday and not only do they look great they also taste delicious and took no time at all to make! Perfect eh?! So here's how to make them...

You'll need:

150g soft butter
125g sugar
1 pck vanilla sugar
1 egg
300g flour
a pinch of salt
1tsp gingerbread spice (optional)
1 pck edible candy eyes
100g whole almonds
parchment paper

Preheat your oven to 180°C and line your baking tray with parchment paper.

Mix the butter, sugar and vanilla sugar til you got a smooth paste then add in your egg. The flour, salt and gingerbread spice follow. Now get in there with your hands and knead the dough til you can form a ball of it.

Roll it out to about 4-5mm and then cut out rounds with a cookie cutter or use the rim of a big glas. Use the same glas or cutter to impress the wings on both sides. Push in the candy eyes and almonds as the beak. Use a small fork to make marks that'll be the owls' feet.

And there you go, after 12 minutes in the oven your cookies will be ready to be devoured ;-)

As you can see these are really the easiest thing ever! Give them a try and let me know how it went! Now there's only one thing left to say:

Merry Christmas and happy holidays to you and your loved ones :-)

Lots of Love,
Jess x
