The Healthy Life | Salad In A Jar

Hello my lovelies, this is the second installment of my healthy life series and I hope you love it as much as I do. This salad in a jar is super easy to prep and stays fresh in the fridge for about 3 days. So if you invest a bit of time on a Sunday you can make a couple of these for your working lunch the following week so there's no hazzle during the week and you're not tempted to go and get some (not so healthy) take away. This is more of an inspiration to you as an actual recipe because you can obviously put in your salad whatever ingredients you like.. make it a Cesar salad if you have some leftover chicken or add some prawns if you're a seafood lover, just be creative ;-)



For this salad I used:





When you've got all your veggies at the ready, layer them into your jar starting with the dressing and top that with those vegetables that are most resistent to the acid in your vinaigrette - e.g. don't start with lettuce as it will turn to sludge in no time.









I tried to make sure that the colours alternate between each layer, so visually pleasing :-)



Fill all the space you have left with your lettuce.



And if you fancy, sprinkle some sunflower seeds on top for added crunch.


Et voilà - there you go - ready in no time - your salad in a jar. Keep in the fridge til lunchtime comes around then shake it all up, pour it into a bowl and enjoy!
