Peach Limes | Summer Drink

Stop the presses! I actually sat down to write up a new post for the blog!! I mean, it only took me nine months or so.. I've been meaning to get back into blogging for a while now but just can't seem to really commit to it at the moment. However, I wanted to share with you a delicious recipe for the perfect summer drink that's both quick and easy to make and only requires a couple of easy to get ingredients. Here's my peach limes recipe for you guys.



What you'll need:

~ 1.2 kg peaches (about 1kg once pitted)
300 g caster sugar
200 ml water
1 lemon (organic is best!)
500 ml vodka


Here's what to do:

Pit and chop the peaches into small pieces then blitz them up in a blender or food processor together with the juice of one lemon. Blitz until you've got a smoothie like consistency.

Meanwhile add the sugar and water into a pot and heat it up until it boils. It will form bubbles. Let it bubble for 5 minutes then remove the pot from the heat and let the syrup cool down a bit.

Add the vodka and sugar mixture into the peach "smoothie" and puree again until it's all mixed up and chunk free. 

There you have it! Pour your limes into sterilised bottles and store them in a dark and cool place until your're ready to indulge :)

Make sure you shake the bottle well before drinking.
