No Bake Blackberry Mousse Tartelettes

Hi there guys. Long time no see. I decided to show this little blog of mine a bit more love again. I'm not even gonna kid myself into thinking that I could post on here as often and as regularly as I did back in the day what with work and life in general being quite full on. I do however find that I'm missing writing on here. I miss styling up my food to share the recipes with you on here. I miss sharing photos from my travels on here. I miss just blabbing on about things if I feel like it. In short: I missed this! So, last week I whipped out the trusty old Canon mounted with a new lens I got (it's LOVE you guys!) and decided to take some photos of these gorgeous little tartelettes I made for our first little family gathering after the easing of lockdown restrictions. I love how they turned out so I couldn't not take a million photos from all angles could I?
These look super fancy and are sure to wow your friends and family if you make them but the best thing is, they're absolutely foolproof!! You don't even need an oven!! These no bake goodies simply need some time to set in the fridge (so make sure you're more organised than me and make room for them in advance - it sure saves you some stress). So let's get into it, here's what you'll need:
- 28 oreo cookies
- 90g butter
- 225g blackberries (I thawed some frozen berries but fresh works just as well)
- 200g light cream cheese
- 75g xylit or normal sugar
- 1 tsp vanilla extract
- 200g cream
- 1 Pck gelatine
- some fresh berries of your choice for decorating
Blitz up the cookies in a food processor or whatever means you have to hand and mix it together with the melted butter. Stir well until combined then spoon it into your tartelette forms (it's important you use silicone forms so that you can easily remove them once they're done - these would work perfectly: Levivo Törtchen Formen Silikon, 6er Backform für kleine Kuchen, Mini Kuchen Backform, Silikonbackform, Backblech für 6 Torten, Gebäckform Rot, Form zum Backen 34,5 x 21,5 cm*). With your fingers, press the mixture into the form to cover the base as well as the walls of the form with the oreo paste.
Once you've filled all six forms, plop them into the fridge to set for about an hour.
In the meantime, puree your blackberries until you've got a smooth paste. If you feel that way inclined you can strain the berry mixture to get rid of the little hard seeds but I quite like them so I left out that step. Add the cream cheese, sugar and vanilla extract to the berries and mix until very well combined.
In a different bowl, whip your cream until it's got stiff peaks. Carefully fold the cream under the berry-cheese mixture. At this point you also want to add in your gelatine (depending on which product you use, instructions differ here. Follow the instructions on the packaging of your gelatine. If you need hot or warm water for yours, make sure to let it cool down a little bit before mixing it in with the rest of the ingredients). There you go, your blackberry mousse is complete.
Spoon the berry mousse into the prepared cookie coated tartelette forms and put the whole thing back into the fridge for 8h (or best over night) to allow to set.
When you're ready to serve them, take them out of the forms and decorate them with some berries and/or edible flowers. Et voilà, you're ready to wow your guests and dig in!
