Pavlova Recipe | A Berry Dream

Sunday, July 24, 2016

I'm back with yet another recipe guys! But guess what! It's by no means a healthy one this time round! I don't eat healthily all the time and I have a massive sweet tooth so cakes and chocolates and all these things are right up my street (unfortunately maybe.. ). And so today I thought I'd make a Pavlova full of red currents to enjoy on this gorgeous summer day. Cause there's only one thing better than cake in the afternoon and that's cake on a sunny summer's afternoon haha!

What you'll need:

6 egg whites
400g caster sugar
vanilla extract
1 tbsp corn flour
1 1/2 tsp white wine vinegar
250g cream
lots of berries (you choose)

How to make Pavlova:

Preheat your oven to 180°C.
Beat the egg whites until stiff, then carefully fold in the sugar, vanilla extract, corn flour and vinegar until you've got a thick shiny consistency.
Line a spring form with baking paper and pour the egg mixture in then put it in the oven and reduce the temperature to 120°C. Bake for 45 minutes. Turn the oven off but leave the cake in. This way it'll gradually cool down. Leave to cool for at least 5 hours or overnight if you can.
Put the Pavlova on a cake plate then cover with the whipped cream. Decorate with lots and lots of berries and serve right away.

Let me know if you recreate this at home. It's easy to make and really good if you're into sweet things :) An absolute summer treat for me. What do you like to bake for a summery tea time? Have you ever made Pavlova yourself? What do you put on it? Leave me a comment and let me know.

Lots of Love,
Jess xx
