Buddha Bowl {Vegan Recipe} | The Healthy Life

I've seen plenty of Buddha Bowls - or Happy Bowls as some call it - on Instagram and Pinterest this year and I was like 'Yeah that's the kind of food trend I've been waiting for!". Buddha Bowls are not only super easy to make, highly customisable to your own taste and incredibly nice to look at, no they're also really healthy! And a tasty, quick-to-make, healthy meal is just what I want in life. Ain't nobody got time and/or money for fancy superfood-y recipes eh? There's lots of ways to make these and you can sure find loads of inspiration on Pinterest but I thought I'd share with you the vegan version I've been cooking up and the dressing that brings the whole thing together perfectly if you ask me. So here it comes:




For the bowl you'll need:
  • baby spinach
  • wild rice
  • sweet potato
  • red pepper
  • spring onion
  • avocado
  • tomato
  • chia seeds

For the dressing you'll need:

  • 1 cup olive oil
  • 1/4 cup water
  • 1/4 cup apple cider vinegar
  • 2 tbsp tahini
  • 1 clove of garlic
  • some cayenne pepper
  • salt
  • spices (you chose)

I started by boiling the rice and frying the sweet potato cubes I made in a pan with some olive oil. The rest is easy, simply chop up all the other ingredients and wash the spinach. Line your bowl with the spinach leaves then add the rice and decorate with all your other ingredients.

For the dressing you simply add all the ingredients into a blender and blitz them up til you've got a nice runny sauce. Pour some of the dressing over your bowl and keep the rest in a mason jar in the fridge for your next salad or Buddha Bowl.

Sprinkle with chia seeds and any other seeds or nuts you have in the house and there you go, you're all done and lunch is served. If you've got any other veggies in the house, or want to have some meat in there by all means, go ahead and see what works best for you. If you don't eat meat but still want some protein in your bowl I suggest you add some chickpeas, they're delicious and a great vegetarian source of protein - I sadly didn't have any at home that day. Another great alternative would be using quinoa instead of rice, but as I said, do whatever floats your boat.
