The Healthy Life | Courgetti

I'd like to start this new series called 'The Healthy Life' to share my journey to a healthier lifestyle with you guys may that be recipes or fitness inspiration or whatever else I find fitting for this category. I'm starting this whole thing off with one of my favourite healthy meals - quick and easy to make, delicious and filling and completely carb-free (Yay!). Perfect for times when you're craving pasta while at the same time trying to lose some weight.



Here's what you'll need:


  • 1 - 2 courgettes (depending on how hungry you are ;-) )
  • 1 small onion
  • 1 little clove of garlic
  • 1 can of sieved tomatoes
  •  ~ 200 ml water
  • vegetable stock, salt and pepper to taste
  • some sugar
  • basil and cherry tomatoes for decoration [optional]

Wash your courgettes then cut them into spaghetti-like ribbons using a julienne cutter (unless you have some money to spend and feel like investing in a spiralizer.. but I think those 30 quid would be much better invested in books or clothes or makeup ;-) )
Steam your courgetti over boiling water for about 5 minutes until they're soft.
Chop your onion and garlic then pop them in a pot with some olive oil until they're nice and soft then add the sieved tomatoes, the water and the stock. Season to taste with salt and pepper and sugar in case it's too sour.




And there you have it, super yummy and healthy courgetti! They take no time at all to make, are easy to prep the day before if you so fancy and satisfy the hunger just like pasta would. What's not to like?

    1. Same here, it's a nice alternative to have and really tasty but it doesn't keep me away from my pasta completely haha :) x
