Cherry Crumble - A Summertime Treat

Wednesday, July 16, 2014

So yesterday I decided to put the massive bucket of freshly picked cherries to good use and make a cherry crumble. Not only because never could we eat that many cherries straight from the bucket but also because I was really craving a sweet treat (and it got me away from studying which is always a good thing). I thought I'd share the recipe with you as it turned out really well if I say so myself. So here's what you'll need:

  • ~ 400g of cherries
  • juice of 2 limes
  • 120g of sugar
  • 140g of flour
  • 1 tsp cinnamon
  • 80g of butter

Preheat the oven to 200°C. Pit the cherries and add the lime juice as well as 1 tbsp of sugar and stir the mixture so that all the cherries are covered with sugar and juice.
Cube the butter and put it into the freezer for approximately 10 minutes. Mix the flour, sugar, cinnamon and a pinch of salt in a bowl, add the butter and get your hands in there to crumble it all up!
Grease four little ovenproof dishes (or one big one if you so fancy) get your cherry mix in there and cover it with your crumbles.
Set your alarm to 30 minutes and prepare for a seriously tasty little treat! If you have an even sweeter thooth than me you might want to add some custard before you enjoy the fruits of your labour ;-)

So that's all there is to do. No excuse not to make this! Especially if you - like me- can convince your brother to do the cherry pitting...
Let me know if you try this and how you liked it! Do you have any recipe ideas that involve cherries? There's still loads left so comment and let me know what could be done with those :-)

Love,
Jess x
