Vegan Mint And Choc Chip Nice Cream
Saturday, August 06, 2022I'm coming at you with a vegan nice cream recipe today! I could eat this for breakfast, lunch and dinner at the moment, while trying to get through this heatwave in an attic flat. It's actually also super quick to make, so so delicious and even free from unnecessary added sugars. All you need is a high speed blender that allows you to blend frozen fruit :)
Here's what you'll need:
[makes two generous portions]
4 frozen bananas
plant milk of your choice
several mint leaves
peppermint extract
vegan dark chocolate chips
a few drops of liquid chlorophyll (optional - this gives it this intense green colour!)
Into your blender add the bananas, mint leaves, peppermint extract and chlorophyll, then add a splash of plant milk before blending. While blending add more plant milk if needed but be careful not to add too much as it might make your ice cream too liquidy. If needed, scrape the sides of your blender until all the bananas have been blended and you have a smooth ice cream like consistency. Stir in your chocolate chips and serve right away, as is or with a drizzle of chocolate sauce on top.
You HAVE to try this! Trust me.. it's soooo good! If you want to keep this super low cal then leave out the chocolate chips and just go for a minty flavoured nice cream but the crunch of the chocolate really makes this recipe!
If you decide to add liquid chlorophyll, there are a few benefits besides the amazing green colour of it. Chlorophyll has antioxidant powers that help the body fight free radicals and is also thought to have positive impacts on your skin. You don't necessarily need to add supplements like liquid chlorophyll to your diet though, many green vegetables like broccoli, kale or spinach are natural sources you might wanna incorporate into your diet instead.
