No-Bake Popcorn & Coconut Chocolate Bars

I'm coming at you with a new recipe today and I thought I'd make it a quick and easy one that would also make a great Christmas present for the foodie in your life. These chocolate bars are of course adaptable to taste.. so if you prefer peanuts to coconut, go for it - get creative!


Here's how I made mine:


- 200g dark chocolate
- about 10g of popcorn (just the plain kernels)
- 50g dessicated coconut (or chopped up peanuts, hazelnuts, etc.)




Now first things first, pop that corn. I use my trusty old popcorn maker* for this which uses hot air to get the corn popping. If you don't have a popcorn maker you can easily pop your corn in a pot on the stove and that works just as well. You will need a teaspoon of oil for that though. Sunflower oil works best as it hasn't got much of a taste of its own.

Put the popcorn to the side and melt your chocolate in a bain marie.

Once your chocolate is melted, mix in the coconut and popcorn and fill a silicone chocolate bar mould* with the mixture. It should make about 10 bars. You can use some popcorn or coconut to decorate the top of your bars. Then the whole thing goes in the fridge for at least two hours to set.


And there you have it: homemade popcorn chocolate bars!
