Lemon Curd Kisses | Royal Wedding Bakes

Happy Royal Wedding Day guys!!! Today Prince Harry and Meghan Markle are getting married at St. George's Chapel at Windsor Castle and I'm gonna be watching the ceremony like many of you will, all excited about THE dress. To celebrate I made some lovely English lemon biscuits featuring one of my faves: lemon curd. They're super easy to make so what are you waiting for? :-)



Here's what you'll need:

200g soft butter
140g caster sugar
1 egg yolk
1 tsp vanilla extract
zest 2 lemons, juice 1 lemon
280g plain flour (you'll need some extra for rolling)
~ 100g lemon curd
140g icing sugar





Mix the butter, sugar, egg yolk, vanilla extract and zest of 1 lemon until it's got a creamy consistency. Slowly stir in the flour and knead to get a firm ball of dough (you might have to add some extra flour here to combat stickiness). Chill the dough in the fridge for about 30 minutes then roll it out and stamp out rounds. Keep re rolling the dough until you've used it all up - you should end up with about 30 biscuits (depending on the size of your biscuit cutter of course).

Preheat the oven to 200° C and bake your biscuits for 12 - 15 minutes until they're pale golden. Set aside to let cool completely.

Once your biscuits are all cooled down, spread some lemon curd on a biscuit then top it with another one. Pop your filled biscuits on some baking paper. In a separate bowl mix icing sugar with enough lemon juice to make it runny but not too translucent. Drizzle the icing over your biscuits and decorate them with the rest of the lemon zest. Leave your biscuits to set.

Now there's only one thing left to do: tuck in there!
