Healthy And Colourful Couscous Salad

Today I thought I'd share with you a little recipe I absolutely love to make because it's quick and easy and basically works with whatever you got in the fridge. And it's healthy and filling at the same time - what's not to like? So let's get started!



For a BIG bowl of salad you'll need:

  • 200g couscous
  • 1 vegetable stock cube
  • 1 bunch of parsley
  • 1 bunch of mint
  • 1 clove of garlic
  • juice of 1 lemon
  • 3 big tomatoes
  • 1/2 a bunch of spring onions
  • 1/2 cucumber
  • 1 red pepper
  • olive oil
  • salt and pepper

Put the couscous in a big bowl and crumble your stock cube into the grains, mix it all up with your hands then pour boiling water over it til it's all evenly covered. Then cover your bowl with a plate or cling film and set to the side.

The rest is simple. You just wanna chop all your vegetables and herbs as finely as possible. After you did that you can take the plate off your couscous and you'll see it will have soaked up all the water. Fluff it up with a fork and add your veggies. Now there's only one thing left to do, add your lemon juice, olive oil and season to taste with salt and pepper.

There you have it. Super simple! It tastes best if you make it a couple of hours prior to your lunch/ dinner so it can properly soak up all the flavour. Obviously you can switch things up as you like with the vegetables and seasoning you use - don't be shy go wild! ;-)
