Baked Apple Spice Granola

So Christmas is well and truly almost upon us and I bet you're still looking for one or another little present for friends and family. So today I leave you with this easy to make, pretty to look at and delicious to eat baked apple and Christmas spiced granola recipe. Spoon this into a pretty little jar, put a bow around it and it's good to go as a Christmas present. Alas, this also adds a special little touch to your own breakfast this advent season. If you're not a fan of some of the ingredients I used, feel free to leave them out or substitute them for other ingredients you prefer - you can absolutely get creative here :)

Here's what I used:

100g porridge oats
50g soy flakes
50g chopped almonds
50g chopped hazelnuts
dried apple slices (torn into little chunks)
~25g cacao nibs
3 tsp cinnamon
1/2 tsp ground ginger
1/4 tsp all spice
1/4 tsp ground cloves
1/4 tsp nutmeg
1 tbsp coconut oil
3 tbsp maple syrup

Preheat your oven to 180°C.

In a big mixing bowl, mix all your dry ingredients.

In a big mug heat the coconut oil until liquid then add the maple syrup and spices and stir well.

Pour your liquid over the dry ingredients and mix really well until everything is coated in your sweet spice mix.

Spread the mixture out on a lined baking tray and bake in the oven for about 15 to 20 minutes. Keep an eye on it while in the oven and stir occasionally to prevent from burning.

Take your granola out of the oven and leave to cool completely before stirring or adding to your jars. This prevents the granola from becoming one big sticky mess, which I had to learn the hard way so trust me on this ;)

I'd love to see your creations so feel free to share your photos with me!

Lots of Love,
Jess xx
