Pumpkin Spice Baked Oats | Vegan

Baked oats are such a quick and easy filling breakfast food! Not only is it quick and easy to make, it's also healthy while feeling indulgent - like a slice of cake for breakfast :) Obviously I had to make a proper autumnal version with pumpkin and all the spices, but there's so many ways of making this, adding fruit, berries, nuts and seeds - whatever you feel like really, just get creative!


Here's what you'll need:
(this makes one portion)

60g pumpkin puree (I used pureed Hokkaido pumpkin)
80g oats
1 tbsp maple syrup
1/2 tsp pumpkin spice
1/2 tsp baking powder
pinch of salt
60ml oat milk (or other plant based)
dark chocolate




Add all the ingredients except the chocolate into a blender until you've got a nice little pumpkin/oat batter. Add the batter to an oven proof dish (lightly grease in advance) and add a piece of dark chocolate to the middle of your ramekin. If you're not feeling chocolatey, top your oats with blueberries or apples to taste :)

Bake in the preheated oven for about 20 - 25 minutes and dig in straight away!
