Chocolatey Coconut Energy Balls

I'm coming at you with a super quick, vegan and gluten-free snack recipe today. These chocolate coconut energy balls are delicious and sweet and the perfect snack to make ahead and store in the fridge for that sugar craving. They will keep for up to two weeks - but probably won't last that long because they're just so good :)


Here's what you'll need:

150g desiccated coconut (plus extra for decorating)
150g almonds
15 - 20 dates (pitted)
50g raw cocoa powder (make sure you use unsweetened cocoa)
pinch of salt
some almond milk





Now all you have to do is put everything in a high speed blender and mix well.. Check the consistency of the mixture to find out wether you need to add more dates or need some almond milk to make it more sticky. It's not an exact science just try what works best for you :)


Now take about a tablespoon worth of the mixture and roll into a ball. You should get about 12 energy balls out of this. To decorate, I rolled the chocolate balls in some more desiccated coconut but you could also go for some sesame seeds or matcha powder - just get creative!


And there you go, that's all there is to it! The dates naturally sweeten the mixture without having to add refined sugars. Almonds are a good source of zinc and magnesium as well as antioxidant vitamin E which supports the brain and helps keep skin healthy. Coconut is another well known "brain food" as well as a great helper to regulate cholesterol levels. So you see, these are packed full of health benefits while also tasting delicious! THE DREAM!
