Gooey Chocolate & Marshmallow Cookies
Sunday, April 11, 2021You know when you go to the shops and get no sweets because you're trying to be good and eat only healthy things? And then that lasts for a day and the sugar craving gets real? Yep, that's me this week :) So naturally I had to find a way to satisfy my sweet tooth and what better way than to make cookies? Ok I did go back to the supermarket to get marshmallows and chocolate chips for these but other that that it's pretty much all cupboard staples. So here's what you need for some deliciously gooey chocolate and marshmallow cookies:
120g room temperature butter
75g brown sugar
75g granulated sugar
1 egg
225g flour
50g cocoa powder (unsweetened)
1 tsp baking powder
vanilla extract
chocolate chips
marshmallows
Preheat your oven to 200°C. Line a baking tray with greaseproof paper.
In a big mixing bowl, cream the butter and both sugars together than add the egg and vanilla exctract.
In another bowl combine the dry ingredients, then slowly add the dry mixture into the big mixing bowl. Add in little chunks of marshmallow and your chocolate chips to taste and gently fold those into the mixture.
Now form little balls of the dough and place them on the baking tray, leaving some room between them as they will flatten out and expand a bit.
Bake in the oven for about 10 minutes then take them out and add a few more pieces of marshmallow to the top of your cookies. Bake for another 2 - 3 minutes then take out and leave to cool completely on a wire rack.
Et voilà - the perfect sweet treat!
